Goat's milk is experiencing a renaissance: it is said to have beneficial properties and even health-promoting effects. True is that goat's milk is a more easily digestible alternative to cow's milk because its proteins and fats have a slightly different composition. In spite or perhaps just because of its sweet and somewhat stricter taste goat’s milk finds wide use in the kitchen.
